What is Menus of Change?
Menus of Change is an initiative developed by the Culinary Institute of America and the Harvard T.H. Chan School of Public Health. This collaborative effort brings together leaders in the food industry, including chefs, nutritionists, and environmental scientists, to create a roadmap for a more sustainable and health-conscious food system.
The core principles of Menus of Change include:
- Plant-Forward Eating: Emphasizing plant-based ingredients and reducing the reliance on animal products for a healthier and more sustainable diet.
- Protein Plays: Exploring diverse protein sources and promoting a shift towards more sustainable options.
- Whole, Minimally Processed Foods: Focusing on whole, unprocessed foods to enhance nutritional value and flavor.
- Good Fats: Emphasizing the use of healthy fats, such as those found in nuts, seeds, and olive oil.
- Sugar: Less of the Sweet Stuff: Reducing added sugars for better health outcomes.
- Salt: A Pinch Less: Lowering sodium levels in dishes without compromising taste.
- Integrity and Transparency: Prioritizing honesty and openness in food sourcing and preparation.

In 2024, UML University Dining proudly became a member of the Menus of Change University Research Collaborative. This collaborative effort extends the Menus of Change principles into academic research, bringing together universities and dining programs to contribute to a shared understanding of the food industry’s impact on health and the environment.
